Super Easy No Bake Mini Pumpkin Pies

With Thanksgiving coming up I thought I'd have a go at making some mini pumpkin pies, cos everything's cuter in mini right? I first tried pumpkin pie a few years ago when I was in America around Thanksgiving and it wasn't like anything I had tasted before - I'm not a huge pie fan but I like the smooth texture of this and I also think it tastes Christmassy! Now I love to cut corners when it comes to baking, I only have a small kitchen and I'm not lucky enough to own loads of baking accessories and ingredients so a no bake recipe is perfect for me. If you're good at making pastry though the recipe is very similar and you just bake the ingredients instead of cooking in a pan first. Using the method below I made about 12 mini pies and one large 9 inch pie - so it makes quite a lot (me and Olly are now eating pumpkin pie for pretty much every meal haha).

♥ Mini pastry crusts - I bought mine pre-made but feel free to make your own!
♥ 1 can pumpkin puree
♥ 1 can evaporated milk
♥ 1 tablespoon of pumpkin pie spice mix
♥ 2 Eggs
♥ 2 sheets of gelatine (I used a vegetarian version)
♥ Squirty cream

♥ Mix the evaporated milk, spice mix and gelatine in a pan
♥ Add the eggs and mix in
♥ Put over a low heat and stir constantly for about 10 minutes - the mixture should thicken when the gelatine dissolves
♥ Take the pan off the heat and mix in the pumpkin puree
♥ Once fully mixed spoon into the pastry crusts
♥ Pop in the fridge for about 3 hours to set
♥ Serve with a squirt of whipped cream (you're meant to use cool whip but we can't get it in the UK!)
